Piccoli Piatti – Small Plates
- Mahi Mahi ‘crudo’, cured raw fish with avocado crème, pomegranate, purslane, green chilli, Meyer lemon gel, young herb oil
- Vitello Tonnato ‘La Vetta’ style – Milk-fed veal, slow poached, Ortiz anchovy mayonnaise, caper berry, celery hearts and Parmigiano Reggiano
Secondi – Main Course
- Paccheri pasta with Moreton Bay bugs, sauce made from its shell with Cassia bark & Star Anise, Pilu’s bottarga, lovage and Aleppo pepper
- Half a Spatchcock cooked in the wood oven, Farro with corn & Morel mushrooms, grilled pencil leek, roasted wing sauce with black truffle
